Huckleberries!


The van slowly rumbled it’s way up the mountain behind our home,
laden with dogs, children, mama and daddy,
joyful with anticipation over an afternoon of picking huckleberries.



The beautiful little blue-purple berries are Idaho’s plant royalty. 
Nearing the top of the mountain, the berries grow in low bushes,
loaded with tiny berries that wallup a big taste,
we putter along a road to gather the gallon we are looking for.  
Folks pay big money for a gallon of freshly picked huckleberries, we however,
just enjoy a day in the woods and the delectable yummies we will make
from what we consider to be God’s best berry.



 Plopping themselves in the middle of a good bush,
the smaller children sat and picked the bush clean,
popping every fat berry they could reach into their mouths. 
I am quite sure they ate at least a gallon while they were picking, but, who could resist?


Later, we will make huckleberry cheesecake, a most famous Idaho desert,
and we will bake huckleberry muffins.
  Huckleberries are the best, we say.  
Thank God for Huckleberries!




Muffins-Poppyseed or Huckleberry



3 eggs
21/4 cup sugar
1 1/2 cups milk
1 cup veg oil
1 1/2 tsp almond extract
3 tsp vanilla extract
3 cups flour
1 1/2 tsp baking powder
1 1/2 tsp salt

1 Tbsp poppy seed or 1 cup huckleberries

Mix ingredients thoroughly.  Pour into greased muffin cups.  bake at 350 for 20 minutes.
We prefer the giant muffin size. :-)




Huckleberry Cheesecake

2 prepared graham crusts
3 pkgs cream cheese
1 large coolwhip

1 tsp lemon peel
Mix cheese and coolwhip with electric mixer, add lemon peel.  Spoon into crusts.  Chill.
sauce:
4 cups berries(rasberries work nicely too)
3/4 cup sugar mixed with 1/4 cup cornstarch
1/3 c. water
2 tbsp butter
Cook berries over med high heat with water and butter.  Just when beginning to boil, add sugar mixture.  Stir for a minute, remove from heat and cool completely.  Pour over chilled cheesecake.  Refrigerate.  Makes two pies.
